This study investigated proximate, mineral and physicochemical properties of starch extracted from
pigeon pea and African yam beans. The cleansed seeds were sun-dried and dry-milled into flour.
Starches were extracted from pigeon pea (PP), white African yam beans (WAYB), Stripped black
African yam beans (SBAYB), black African yam beans (BAYB) and pure brown African yam beans
(PBAYB). Proximate, mineral and physicochemical analysis of the samples were determined.
Moisture contents (%) ranged from PP (4.96 ± 0.02) to SBAYB (8.07 ± 0.01) flour and (8.96 ± 0.02)
to (12.54 ± 0.01) starches. % fiber from PP (1.98 ± 0.02) to WAYB (1.52 ± 0.02). No fiber contents
were detected in the starches, Both the flour and starches were rich in K-PP (598 ± 0.04) to PBAYB
(621.35 ± 0.08) and (229.22 ± 0.03) to PBAYB (322.02 ± 0.21), Ca-PBAYB (79.40 ± 0.02) to PP
(99.00 ± 0.02) and PBAYB (51.44± 0.01) to PP (79.00 ± 0.05), P-WAYB (164.36 ± 0.02) to PP
(201.44 ± 0.02) respectively but Mn, Hg, As and Ni were not detected in all the samples.
Physicochemical properties revealed that pH ranged from SBAYB (4.78± 0.02) to PP (6.74 ± 0.02),
acidity- PBAYB (0.32± 0.00) to PP (0.48 ± 0.02), amylose-PBAYB (11.00 ± 0.00) to PP (17.00 ±
0.02) and energy- WAYB (364.61 ± 0.01) to SBAYB (391.28±0.02). This suggests that the starch
samples could be a good binder in food and pharmaceutical industries.
